The Delicious Nyonya Cuisine is in Delhi!

The founder of Kuan Kitchen Club, Chef Lai Kuan Geo, returns to Tamra Restaurant at Shangri-La Eros New Delhi with the magic of Nyonya cuisine. Chef Kaun’s special menu is available for the lunch and dinner buffet at Tamra from 5 until 16 April 2023.

Peranakan cuisine or Nyonya cuisine comes from the Peranakans, descendants of early Chinese migrants who settled in Penang, Malacca, Singapore and Indonesia. Nyonya cooking is the result of blending Chinese ingredients with various distinct spices and cooking techniques used by the Malay and Indonesian community. This gives rise to Peranakan interpretations of Malay and Indonesian food that are similarly tangy, aromatic, spicy and herbal.

The signature collection at Tamra will include Scallop & Seafood cake, Sesame Spring Chicken, 2 Ways Pork Belly, Mushroom in Claypot, Hainanese Chicken Rice, Roasted Bamboo Rice Page 2 of 4 Cakes, Chili Pepper Salt Ocean Basket, Whole Red Snapper Chili Jam, Bosomboh, Chai Kuih, Asam Laksa and Char Kway Teow from Penang, and more.

Commonly known as the Asian food guru, Chef Kuan was born into a Chinese family in Malaysia. With more than three decades of experience as a Pan-Asian Cuisine specialist, he travelled the world at the tender age of 19 and began his incredible culinary journey in Amsterdam in 1989. Over the years, Chef Kuan has found himself at the helm of culinary operations of various Asian specialty restaurants within South-East Asia, the Middle East, India, the Maldives and Mauritius. In South Africa, Chef Kuan is the culinary mastermind behind some of the most prestigious Asian restaurants in the country, including his first Asian eatery L’Orient in Cape Town, Macau Asian Tavern in Cape Town, Kitima at Kronendal in Cape Town and most recently, Tang in Sandton in Johannesburg.

“I was fascinated about traveling to explore new food from different continents in the world. My work experiences have made me very flexible to adapt to all kinds of environments and I always find myself fitting in well easily. I am super excited to return to Tamra for my second stint and bring the magic of Nyonya cuisine to the capital city”, says Chef Kuan.
