Celery

The vegetable contains 95% water, but that does not mean that it does not have any nutritional value. High amount of potassium, folate, fibre and 30% of the daily vitamin k are fulfilled by celery only. Even though there are only six calories in a single serving.

The vegetable is always consumed fresh preferably on the same day purchased. Consumed after five or more days and it will lose its essential nutrients.

Kale

Although it has got less amount calories – a cup of raw kale has only 33 calories but it also contains close to three grams of protein and 2.5 grams of fibre per serving.

For vegetarians, Kale is one of the few foods that has got omega-three fatty acid, a nutrient commonly found in fish. Like different varieties of lettuce, kale is rich in vitamins and folate.

Cucumbers

A fruit that is primarily made of water, cucumbers contain 16 calories per serving. The seeds and the skin contain most of the nutrients so its better they are not removed.

The skin and seeds of cucumbers contain high amounts if Vitamin A also known as beta-carotene which are good for vision.

Broccoli

A nutritious vegetable eaten raw, steamed or grilled. Broccoli is a super food containing sulforaphane, an anticarcinogen that works to destroy cancer-causing chemicals that the body might take through the environment. The super vegetable can be consumed in any form as a starter or a main course.

Legumes

Besides being rich in vitamins A, C, E and K one serving contains at least 20% of daily nutrient requirement with only 31 calories per serving. Beans, peas and lentils are great source of fibre and protein.

Legumes, such as beans, peas and lentils, are well known for being good sources of fibre and protein. Legumes like beans, chickpeas and lentils are more filling than pasta or bread.
