In conversation with GlobalSpa, India’s beloved Chef Harpal Singh Sokhi spills live delicious recipes, edible discards, and much more.

Amongst the many “mores” we’ve been doing of, cooking has definitely been one of them. Whether it’s trying out new recipes, cuisines, baking, or perfecting our mother’s golden recipes, the kitchen sure feels like a hotspot during this lockdown.

With our inner chef in mind, we went live with one of India’s most beloved chefs of all times - “Namak Shamak” Chef Harpal Singh Sokhi!

IS “BEST OUT OF WASTE” A PERIL?

While the practice itself is good, Chef Harpal explains how it might not be the best in the kitchen. “If we talk about 40-50 years back, these fertilizers or pesticides weren’t used a lot but today they are used to a large extent. All those people seeking to make the best out of waste with food, I suggest you stay away from it. If you still wish to, the best you can do is soak your vegetables in water with one tablespoon salt or 100 ml vinegar for about an hour or two to remove all the chemical residues from your produce.”

A must-try golden recipe - MATAR DAL CHILKHA

“My mother and grandmother used to make this recipe. They used to cook the covering of pea with the peas themselves. It used to be a dry recipe and we used to eat it with daal and paratha.”

How to make the perfect RAW MANGO DISH

“You can roast your mangoes like you do with eggplants, and make a compote of it. Just roast the mangoes on the stove, peel the outer covering and grind the flesh of the fruit. Sprinkle on some salt, rock salt, cumin and your raw mango dish is ready to eat! The burnt flavor gives it such a ravenous taste and texture.” adds Chef.

HOMEMADE IMMUNITY BOOSTER

“One thing you can do is try the boil and drain method of rice.” suggests Chef Harpal, “Once the rice is boiled, drain out the water and let it cool for 4-5 hours at room temperature. Once cooled, add some lemon, sugar, and ice, and drink it just like that! This is one of the best drinks to cool off with during summers.”

“For those who avoid sugar or are diabetic, replace sugar with ginger and cumin and you’re good to go. Your immunity is in the best hands if you’re consuming this drink.”

SECRET INGREDIENT FROM THE KITCHENS OF PUNJAB

“Desi Ghee. Just adding a bit of desi ghee to your dish makes wonders. That’s my secret ingredient.” reveals Chef Sokhi.
