As I wandered down its storied streets, the aroma of frying catfish mingling with the scent of sweet pralines seemed to promise a culinary experience that would stick to my ribs, and my memory, for years to come. Louisiana’s food scene is not just rich; it’s operatic, a symphony of influences that unfold with every bite.
