Bringing the soulful flavours of the Valley to the capital, Food Exchange at Novotel New Delhi Aerocity invites connoisseurs and food lovers to experience the soulful flavours of the Valley with an exclusive Kashmiri Food Festival, curated by Speciality Chef Archana Dhawan, from 16th to 25th January.
About the Chefs
A Kashmiri Pandit and an acclaimed speciality chef from the Delhi NCR region, Chef Archana Dhawan brings to the table the richness of her heritage in collaboration with Chef Pin, the renowned culinary talent company founded by food historian and gastronome Rocky Mohan. Together, they present an immersive celebration of Kashmiri cuisine, known for its depth, warmth, and subtle yet distinctive use of spices.
The Taste of Kashmir: The Menu
The festival showcases an elaborate buffet that pays homage to time-honoured recipes, traditional cooking techniques, and authentic ingredients. You can indulge in a thoughtfully curated selection of slow-cooked classics, aromatic gravies, comforting vegetarian delicacies, and signature accompaniments, with each dish reflecting the elegance, simplicity, and hospitality intrinsic to Kashmiri culinary traditions.
Chef Archana’s nuanced understanding of regional Indian cuisine ensures that every preparation remains true to its roots while resonating with contemporary palates. Her collaboration with Food Exchange is rooted in a shared belief that food is a powerful medium for storytelling.
