Gourmet Design Company
22-Sep-2025
From all-day wedding cafes to globally inspired grazing tables, Dipti Sawalka, founder of Gourmet Design Company, reveals how they’re setting the trends for 2025 weddings.
Gourmet Design Company (GDC) was built on this very belief: that food, when thoughtfully designed, becomes the most powerful medium of engagement at any event. Founded by Dipti Sawalka, GDC transforms catering into curation. Every menu is a narrative, crafted with memory, culture, and emotion. From flavour to form to flow, every detail is part of an immersive journey that brings stories to life on a plate.
Its clientele includes some of India’s most prominent industrialists and institutions, including Reliance Industries, Century Ply, Emami Group, Rupa Group and Priya Gold, among a distinguished list of over 100 families and organisations across the country. Through extensive research, Dipti has shared how she sees the Indian wedding food palette evolving from gourmet grazing platters to moving food stations at baraats.
Below she has listed a few key trends she sees being adapted during the upcoming wedding season:
Wedding Trends for 2025:
Moving Baraat Bites
As baraats move, so does the food. From roaming chaat stations, cold refreshments, and late-night snacks like roasted chestnuts and mini burgers, expect food that moves around to keep the energy high at all times.
All-Day Wedding Cafes
With round-the-clock celebrations, dedicated cafes offering speciality coffee, teas, and snacks like avocado toast or eggs on sourdough are becoming essential guest lounges.
Elevated After-Party Menus
The after-party binge is getting a gourmet upgrade. Move aside greasy sandwiches, and think truffle mac & cheese, spicy noodle bars, or even crispy dosas and idlis.
Globally Inspired Grazing Tables
Opulent grazing tables are stealing the spotlight, offering high visual impact and bite-sized delights. These range from petit fours and mezze to Indian street food reimagined — all served in elegant, Instagram-worthy setups.
Street Market Sensibilities
Street food from the likes of Bangkok and London are a huge source of inspiration. Dishes like Thai steamed dumplings or London-style grilled cheeses are being elevated into gourmet experiences — beautifully plated, but bursting with flavour.
